Paleo Courgette Savouries

Breakfast heaven in bed with Mr O  (and cup of tea), no crumbs. Late for work …..

Recipe:
(Makes 9)

3 courgettes, grated
2 large eggs
1 onion, minced
1 cup. almond flour
3 tbsp. fresh chives, finely chopped
½ tbsp. garlic powder
Coconut Oil (to line the tins)
Sea salt and freshly ground black pepper

Mix all the ingredients together
Lots of seasoning ramps up the taste
Press mixture into muffin tins (use a little oil if necessary)
Cook at 180 for about 20 mins
Great finger food or serve with light salad
