Paleo Chicken with Tomato and Balsamic Vinegar

Wednesday is recipe day and not one to disappoint, here is my take on balsamic tomato chicken: yum

 

Ingredients:

Onion
Garlic
Butter
Chicken breast chopped into chunks
500g tomatoes
2 – 3 tblspn balsamic vinegar
more butter/lemon juice
Basil leaves

Method

Fry the onion and garlic in the butter
Add the chopped chicken
Fry to cooked
Add 2 to 3 tablespoons of balsamic vinegar
Fry this off
Add the chopped up tomatoes
Cook for 15 minutes until you have a lovely sauce for the chicken
Squeeze lemon juice over
Stir in knob of butter
Add torn up basil leaves to decorate and serve with green veg
