It’s been a tough week everywhere, followed by an even tougher weekend. This morning I watched George Osbourne on the TV and was struck by the uncertainty of change (again).
The best take I read on this over the weekend was from Janet Jones (who is somewhat optimistically titled: the happiness millionaire) who shared these thoughts:
“Edward Lorenz 1919 – 2008 is the father of the chaos theory and the butterfly effect. He summarises that ‘Chaos – when the present determines the future, but the approximate present does not approximately determine the future.’ In other words what happens today has a direct impact on the future, there is no question about that.
Life will always be made up of order and chaos. It is the universal law that pushes us in the right direction. With awareness of the impact of chaos and order, we are able to grow spiritually and emotionally and maintain our sense of well-being. Initially, chaos creates discomfort, so we have a natural desire to create order from chaos. Generally, chaos isn’t seen as beautiful, it is seen as a mess, emotionally it is anxious, confusing and painful
So this weekend we ate:
Hemsley and Hemsley Beef and Bacon Stew

Almond Flour Tortilla Wraps
and I made almond tortillas from this recipe to eat with the beef stew
Ingredients:
(Makes 6)
1/2 cup of ground almonds
5 eggs
Pinch of salt
Dash of coconut (or olive) oil
Dash of honey to taste
Method
To make the wraps:
Whisk all the ingredients together
Makes a very wet mixture
Add a dash of coconut oil into frying pan
Ladle portion into frying pan
Cook one side, flip over and cook the other side

Here is someone else’s tortilla wrap from the net: a little heavy on the starch and eggs maybe but might be a more genuine tortilla taste – I log and share it here as it may be helpful – let me know!
