Some weekends call for cake.
And this was beautiful – a sticky, moist, rich-textured cake, topped with thick, creamy American frosting – unbeatable.
We ate large slices outdoors in a brief burst of brilliant hot yellow sunshine lost all too quickly between the heavy rain-clouds and high winds that blew in from the west. The days are already beginning to shorten reminding us in bursts of chilly autumn evenings and crisp winter days around the corner.
Walking back over the fields last night we saw blackberries in the hedgerow, plump and purple against the lime green leaves and scarlet stems, reinforcing our knowledge that change is coming.
Recipe *(Paleo Friendly)
The method was quick and easy
- Mix the wet ingredients together
- Mix the dry ingredients together
- Grate the carrot and apple
- Mix all into the wet ingredients
- Place in a tin and bake at 180 for about 35 mins
For the icing mix the butter and icing sugar together (with an electric whisk) then add the cream cheese
Layer on thickly and enjoy.
We decorated the cake with some tiny luminous flowers and then ditched that in favour of bold orange and purples blooms to drawn out the rich lusciousness of the bake – what do you think?
