Drove home late from work and set too with this dish , quick to prepare, easy to cook and ready in thirty mins!
Ingredients
For the Pizza Base
500g chicken breast (minced)
1 tbsp tomato puree
I clove garlic (peeled/chopped)
1 tsp mixed herbs
1 tsp smoked paprika
Sea Salt and cracked black pepper
For the Sauce
5 tbsp tomato passata
1 tsp oregano
Sea Salt and cracked black pepper
For the Topping
4 olives (finely chopped)
1/2 green pepper (de-seeded and finely chopped)
Handful of cherry tomatoes
Mozarella cheese to taste
Fresh torn basil leaves
Method
- Pre-heat the oven to 180C/350F/Gas Mark 4
- In a large bowl using your hands, mix together the minced chicken breast, tomato puree, chopped garlic, mixed herbs, smoked paprika, seasoning
- Lightly oil a lined baking sheet
- Shape the minced chicken mixture into four pizza bases approximately 1 cm thick
- Make the pizza sauce by mixing together the passata, herbs and seasoning and top each pizza with a dollop of sauce spreading out towards the edges.
- Top each pizza with the olives, cherry tomatoes, mozarella and fresh basil .
- Place in the pre-heated oven and cook for 20 mins.
